BASIC BAKING POWDER
DOUGHNUTS
4 Eggs, beaten Combine eggs & sugar; beat until light.
Add milk and cooled shortening.
Sift together dry ingredients and add to egg mix. .
Mix til smooth. Chill soft
dough thoroughly in refrigerator. Roll dough out gently to 1/3” thick.
Cut with floured doughnut cutter. Let
stand 10-15 min. Heat oil in deep fryer to 375ºF. Transfer doughnuts to fryer with spatula. Limit number of doughnuts in fryer to the amount that can float across top easily. Turn as they rise to surface. Fry 2-3 min or til just brown. Lift with kitchen fork through “hole”. Drain on paper towel. Then coat as for yeast doughnuts. Makes 30 doughnuts.
