BASIC BAKED CUSTARD PIE
FILLING 4 eggs 2/3 c. sugar ¼ t salt 1½ c milk, scalded 1 c. light cream scalded 1 tsp vanilla ½ t. nutmeg 1 unbaked pie shell, chilled
Beat eggs slightly; then add remaining ingredients except nutmeg and pie shell. Pour into chilled pie shell. Sprinkle with nutmeg. Bake at 400ºF for 25-35 minutes or til knife comes out clean when inserted in center of pie. Cool 30 min. then chill til ready to serve. VARIATIONS: Coconut Custard: Omit nutmeg and add 1 c flaked coconut to custard. Sprinkle with a little coconut on top and bake. Maple Nut Custard: Omit nutmeg. Drizzle a little maple syrup over pie and sprinkle with chopped walnuts or almonds.
