How to Re-liquefy Honey

Honey can be safely stored at room temperature, even after opening.  You do not have to refrigerate it but it is best stored where it will not get warmer than 75°F because the higher temperatures may cause it to lose flavor and color.

Unpasteurized honey may tend to crystallize especially if exposed cold temperatures for long periods of time.  This process is normal and even crystallized the honey is still good.  To liquefy the honey crystals, just place the jar in a pan of hot water (about 130°F or no hotter than you can comfortable put your hand into).  It will begin liquefying in a few minutes.  Keep replacing the water as it cools if needed.  Do Not Overheat as it will ruin the flavor.
