Marmalade, Preserves and Butters From Barry Farm Foods While the term preserves is used differently by people from different locals, we are using the term to describe a sweet condiment with whole pieces of fruit in a thick syrup or gel. The jams are pureed fruit and jellies are made from only the juice. The butters are fruits that have been pureed and cooked down until thick, pectin is never used on any of the butters.
