Yellow cornmeal is ground from whole
yellow corn kernels.
The main ingredient in cornbread, cornmeal has
a myriad of uses in ethnic and traditional foods from tacos to hush
puppies to mush and more.
RECIPE
SPOON BREAD:
Ingredients:
1 c yellow cornmeal*
1 1/2 c boiling water
1 T softened butter
3 eggs, separated
1 c buttermilk
1 t. sea salt*
1 t. cane juice crystals*
1 t. baking powder*
1/4 t. baking soda*
Put cornmeal in bowl and stir in boiling water.
Continue stirring until cool to prevent lumping.
Blend in butter and
egg yolks.
Stir in remaining ingredients except egg white.
Beat egg white til soft peaks form; fold into cornmeal
mixture.
Pour into greased 2 qt. casserole.
Bake at 375ºF
45-50 min.
Serve at once with butter.
Serves 8
Spoon onto plate and serve with butter and eat with
fork.
