Millet grits are
ground millet grain.
RECIPE
MILLET
GRIT LOAF
Ingredients
1 ½ c millet
grits*
3 ¾ c water
2 t. sea salt*
1 ½ c shredded carrot
1 c shredded celery
1c diced onion
1 garlic clove minced
2 T Sesame oil
1 ½ t dill weed*
1 t thyme*
1 c sunflower seeds raw*
3 T Unbleached all purpose flour*
3 T Gluten flour*
Place millet grits in pan with water
and ½ t. sea salt. Cook
covered over medium heat about 30 min or til soft.
Millet should absorb all the water.
Saute all carrots, celery, onions and
garlic in oil til onions translucent.
Add seasonings and 1 ½ t salt.
Combine with millet and nuts.
Mix together the flours and add to
millet mix blending so it will hold together.
Lightly oil and flour loaf pan.
Press mix into pan and bake at 400ºF for 45 min.
Allow to cool 10 min and remove.
Slice and serve on bib lettuce leaf and creamy salad dressing.
