Oat
bran is the outer coating on oat groats (grains).
Removed from the
grain, oat bran is soluble fiber which aids in reduction of cholesterol.
Oat bran can be cooked as a cereal, added to
baked goods, or included in smoothies to increase your daily intake of
fiber.
RECIPE
APPLE BRAN MUFFINS:
Ingredients:
4 T shortening
1/2 c cane juice crystals*
1 egg beaten
1 c milk
1 c apples, peeled & chopped
1 t cinnamon*
2 c. whole wheat pastry flour*
3 1/2 t baking powder*
1/2 t sea salt*
2 T cane juice crystals*
1 c. oat bran*
Cream together shortening and sugar.
Add well beaten egg.
Combine flour, baking powder salt and 1/2 t
cinnamon.
Add dry ingredients to first mixture alternatively with
milk.
Stir only enough to mix ingredients. Fold in apples and
oat bran.
Drop by spoonfuls into greased or lined muffin tins,
filling 2/3 full.
Mix together the 2 T sugar and 1/2 t cinnamon and
sprinkle on top.
Bake 400ºF for 25 minutes.
Serve hot makes
12-15 muffins.
