Soy grits are
ground soybeans.
Cooking time for soy grits will vary according to
the size of the grind; larger grits take more time to cook and require
more water. Depending on the size of the soy grits
it can take from between 15 min to 1 hour.
Soy grits can be mixed with ground beef as an extender
for meatballs or meatloaf, can be cooked as a cereal, added to soups,
stews, and casseroles; or toasted with granola.
RECIPE:
PORCUPINE BALLS
1 t soy
grits
¼ c tomato juice
1 c cooked long grain brown
rice
1 c ground beef
1 egg slightly beaten
2 t. grated onion
1 t sea salt
1/8 t marjoram
1t paprika
dash of black pepper
1 ½ c tomato juice
½ t honey
¼ t. soy sauce
Soak grits in ¼ c tomato
juice for 15 min. Combine
rice, beef, egg, onion, salt, spices and grit mix.
Mix lightly. Shape
into 2” balls.
Place
in baking dish. Mix together
remaining tomato juice, honey and soy sauce.
Pour over meatballs and bake 35 min at 325ºF.
