Barley malt powder is made by allowing
whole barley grain to sprout briefly, drying them and then grinding into a
powder.
This produces a sweetener that is slow digesting. Not
as sweet as sugar in carob chips it gives a semi-sweet flavor.
RECIPE
MALTED CAROB CHIP COOKIES
Ingredients:
1 c. butter
1 1/4 c. brown sugar*
1/2 c. barley malt powder*
2 T. milk
1 T. Spicery Shoppe vanilla*
1 egg
2 c. whole wheat pastry flour*
1 t baking soda*
1/2 t. sea salt*
2 c barley malt sweetened carob chips*
Cream together butter, sugar and barley
malt powder.
Add milk & vanilla; beat together for 2 minutes.
Add egg.
Blend dry ingredients together and add gradually to creamed
mixture, mixing well after each addition.
Stir in carob chips.
Form 2" balls and drop onto ungreased
cookie sheet 3" apart.
Bake at 375ºF for 12-14 min til golden.
Cool for 2 min before removing from pan.
Makes 1 1/2 dozen.
