Candied pineapple is a key ingredient in
most fruitcake recipes adding the sweetness and spark of pineapple to the
fruitcake.
RECIPE
FRUIT BARS:
Ingredients:
2 c. Thompson raisins*
1 1/2 c. candied pineapple*
1 c. chopped walnuts*
1/2 c. orange juice
2 t Spicery Shoppe vanilla*
1 c butter
1 c. cane juice crystals*
1 c. brown sugar*
2 eggs, beaten
4 1/2 c whole wheat all
purpose flour*
2 t ground cinnamon*
2 t baking powder*
1 t baking soda*
Rinse raisins in hot water and
drain on towel. Combine all fruit nuts juice and vanilla and let
stand.
Cream together butter, sugar and eggs. Combine dry
ingredients and add in thirds to creamed mix til smooth. Add fruit
mix and blend well. Let stand 1 1/2 hours in refrigerator or
overnight.
Spread dough on greased 15x10x1 jelly roll pan. Bake at
400º F 15-20 min. til lightly browned. Cool in pan and cut when
cool. Makes 4 dozen.
