Cocoa powder is a product from the cocoa
bean.
The beans are heat dried in a 3-9 process.
This process
ferments the beans and brings out the chocolate flavor.
They are
cleaned and then roasted, which releases the shell from the center (nib).
These nibs are ground to produce chocolate liquor.
The
cocoa butter is removed and the remainder is ground to produce cocoa
powder.
RECIPE
COCOA SYRUP:
Ingredients:
1/2 c. cocoa powder*
1 c. cane juice crystals*
1/8 t. sea salt*
1 c. boiling water
1 t. Spicery Shoppe vanilla*
Combine cocoa, sugar, and salt in saucepan.
Add the water gradually stirring until mixture is smooth.
Cook over
medium heat until comes to a boil.
Boil 1 min without
stirring. Remove from heat and cool.
When cool, stir in
vanilla.
Pour into jar or other container, cover and refrigerate til
needed.
