If
you need a meringue and don't have the eggs, you can use Meringue Powder.
In a clean bowl, place 1 c. cold water. Add 1/4 c.
meringue powder. Mix on high speed til meringue reaches soft peaks.
Continue mixing on high while gradually adding 1 c. sugar til stiff peaks
form.
Use as you would any meringue, on pies, in angel food
cake, or soufflé recipes.
