Cherry Pineapple Supreme is a combination
of red and green cherries and multicolored pineapple to replace mixed
fruit in fruitcakes, stollens and other holiday baked goods where you
don't want the citrus or citron.
RECIPE
CANNOLI
To make cannoli you will need 3-4 metal tubes of metal about
7" long and 1 1/8" diam.
Pastry:
2 C Unbleached all
purpose flour
2 T shortening
1 t. fructose
1/4 t. sea salt
3/4 c marsala wine, burgundy or chablis
vegetable oil
Filling:
3 c Ricotta
1/2 c Confectioners sugar
1/4 c Cinnamon
1/2 t Spicery Shoppe
Vanilla
6 T Cherry
Pineapple Supreme, drained & chopped
Pastry: Combine flour, shortening,
fructose and salt. Gradually add wine. Knead together with
fingers to form a hard dough or paste. Form into ball, cover with
cloth and let stand 1 hour. Cut in half and roll half into thin
sheet 1/4" thick. Cut into 4" squares. Place metal
tube across diagonally each square and wrap dough around tube. Seal
overlapping corners with egg white. Heat oil in deep pan for
frying. Drop one or two tubes at a time into hot oil. Fry
gently until dough is golden brown. Remove from pan and let
cool. Gently remove shell from tubes. Set aside to finish
cooling. Repeat with until all shells are made.
Filling: Sift together confectioners
sugar and cinnamon. Mix thoroughly with ricotta. Add vanilla
and fruit. Blend well. Chill in refrigerator before filling
shells.
Fill cold shells, smooth ends of each shell
and sprinkle with more confectioners sugar. Refrigerate til ready to
serve.
