Sugar
partially hydrogenated palm kernel oil
carob
soy lecithin

Sweetened
carob chips is a non-chocolate substitute for milk chocolate chips.
Made with carob instead of chocolate, these chips can be used in every
recipe calling for chocolate chips with excellent results.
Unlike chocolate chips, carob chips do not melt
as smoothly as chocolate chips. The addition of paramount
crystals* (a combination of soy lecithin and
palm kernel oil) will smooth out the graininess usually seen with carob.
We recommend you try 1 cup of carob with up to 1/4 c of paramount crystals
(the amount varies and we suggest trying a little at a time until the
chips are melted to your specifications).
RECIPE
CAROB-RASPBERRY
TRUFFLES
1/3 C Whipping Cream
2 C Sweet Carob Chips
3 T Red
or Black Raspberry Jam
½ t. Spicery Shoppe
Almond Flavoring
¾ C. Almond Meal
In medium saucepan, bring
cream to boil over medium high heat.
Remove from heat and whisk in carob chips, jam and flavoring until
combined. Chill at least 2
hours.
Shape
mixture into ½” balls. Roll each ball in almond meal.
Chill truffles until ready to serve. |
