The Calypso Bean (Phaseolus Vulgaris) is a round, plump new comer. This
bean is a dramatic and beautiful hybrid of the Kidney Bean (Phaseolus
Vulgaris). About 3/8 inch long with a silky smooth texture. This bean is
somewhat sweet, firm and flavorful. Half black and half white with one
polka dot for emphasis, this novel bean looks as if the ancient Chinese
Yin Yang symbol of harmony was imprinted upon it. They are also
known as Orca or Dalmatian beans.
Calypso Beans are a delicious addition to pasta salads, soups casseroles
and stews. Cooked Calypsos combined with cooked rice make a wonderful
stuffing for vegetables. Blends well with fresh corn.
RECIPE
CALYPSO BEANS, TOMATO &
POBLANO STEW
3 T
extra-virgin Olive Oil
1 med onion
chopped
3 garlic
cloves chopped
1 bay leaf
1 ham hock
1 lb calypso
beans, soaked overnight and drained
1T ground
cumin
1T Chipolte
powder
4 Poblano
peppers, roasted, seeded and chopped (use gloves)
4 tomatoes,
seeded and chopped
1 t. cilantro
sea
salt and freshly ground
black pepper to taste
lime wedge
for garnish
In
large pot, over medium heat add olive oil.
When oil is hot, cook together onion, garlic, bay and ham hock for
about 5 min. Add the beans
and stir in remaining seasonings. Pour
in enough water to cover beans 1”, and bring to boil.
Cover and cook over med heat til beans are tender (about 1 hour).
Remove bay and discard. Remove ham hock, pick meat from bone and
return meat to pot. Adjust
seasoning and serve with lime wedges for garnish.
