Pinto
beans are similar in taste and texture to kidney beans and can substitute
for kidney or cranberry beans in all recipes.
Used a multiple
Mexican and Latin American recipes.
RECIPE
MEXICALI REFRIED BEANS:
1 lb pinto beans* cooked
1/2 c canola oil*
1 onion chopped
1 t. chili powder*
1 c tomato sauce
1 c. grated cheddar cheese
Drain beans and mash.
In skillet sauté onions and gradually add, 1/4 c
at a time, beans and sauté.
Push to side and continue adding beans until
hot through and mixed with onion.
Add chili powder and tomato sauce.
Pour
into greased casserole.
Top with cheese and bake 30 min at 325ºF.
