Lentils are one of the few legumes not to
presoak.
They cook in about 30 minutes without soaking.
Has an assertive
taste.
RECIPE
CURRIED RED LENTILS:
2 c red lentils*
2 T canola oil
1 small onion, chopped
2 t. curry powder*
6 c chicken stock
Freshly ground black pepper*
Rinse and drain lentils.
In large pan heat oil and sauté onions til
softened.
Add curry and cook for minute or two to take off raw edge.
Add
lentils and toss to coat.
Pour in stock and bring to just below boil.
Reduce heat and simmer slowly til tender about 30 min.
Season to taste
with pepper.
