Beans, Red, Small
|
Small red beans are a "pea" size variety of
legume used in Mexican recipes like Red beans and Rice.
RECIPE
RED BEAN PORRIDGE:
4 c. cooked red beans* pureed
2 c stewed tomatoes
1 bay leaf *
2 T. chopped parsley
1 T. chili powder*
1 c. sliced carrots
1 c sliced celery
1/2 c sliced onion
1 c sliced peeled potatoes
2 qts water
2 t. sea salt*
Cook celery, carrots, onions, and potatoes in 1-1 1/2” water til
tender.
Combine all ingredients and simmer together 2 hours.
Serve hot
