Brown Rice
Farina is a form of Cream of Rice. The whole grain is ground so that
none of the nutritional value in the rice escapes.
This is a "stick-to-your-ribs" hot
cereal that is great on those cold winter mornings.
RECIPE
POUTIKA (Greek Farina Custard)
1 Qt (4 C) Milk
1/2 C Brown Rice Farina
1/2 C Cane Juice Crystals
1T Spicery Shoppe
Vanilla
2T Butter
2 Eggs well beaten
1 c honey
1 T Lemon juice
1/2 c water
1/4 c almonds chopped
cinnamon
fruit jam
In pan, bring milk to boil. Add brown
rice farina, cane juice and vanilla. Cook 15 min. stirring
constantly. Remove from heat and stir in butter. Add a little
of hot mixture to eggs and beat well then mix into remaining cereal.
Pour mix in butter baking dish and sprinkle
with nuts. Bake 20 min at 350°F.
Heat honey, lemon juice and water in sauce.
Bring to boil and continue cooking for 5 min. Pour hot syrup over
baked custard. Sprinkle with cinnamon and let cool 4 hours.
Cut in squares and serve plain or with jam.
