Cracked Wheat is
whole wheat berries chopped.
These cook faster than whole berries
and slower than bulgur.
You can use them in recipes calling for rice
(side dishes) or for bulgur (like tabouli).
RECIPE
Vegetables with cracked wheat:
Ingredients:
1/4 c olive oil
1 c. chopped onions
3 cloves garlic minced
4 c. coarsely chopped red cabbage
1/2 c chopped bell pepper
1 1/2 c. uncooked cracked wheat*
3 c. tomato sauce
1 c water
1 t. dried basil*
1/2 t paprika*
1/4 t. oregano*
1/4 t. thyme*
1 t. sea salt*
1/4 t black pepper*
grated Parmesan cheese
Heat oil in skillet and saute onions til
tender.
Stir in garlic, cabbage and red bell pepper.
Continue cooking until just slightly tender.
Stir in cracked wheat.
Add tomato sauce and
water and bring to boil. (Add extra tomato sauce and water if
necessary to cover all veggies.)
Season with herbs and salt & Pepper.
Reduce heat to low, cover and simmer 20 min or til liquid is absorbed.
Sprinkle with cheese and serve.
