Organic Rye Flakes is
similar to Regular Rolled Oats.
A hearty hot cereal that can replace
oatmeal in any recipe for a distinctive flavor change.
RECIPE
Rye Flakes and Eggplant:
Ingredients:
2 Tbs. olive oil
1 medium onion, chopped
2-3 cloves garlic, minced
1 large eggplant, peeled and finely diced
1 cup rye flakes*
2 cups water
1 tsp. curry powder*
1/2 tsp. each coriander*, ground cumin*,
and dry mustard*
4 tomatoes
2/3 cup yogurt
Sea salt* and freshly ground pepper*
to taste
In a large
skillet, heat oil and sauté onion until it is translucent.
Add garlic and
continue to sauté until onion is golden.
Add eggplant, rye flakes, water
and seasonings.
Stir together and simmer over low heat, covered, until
eggplant and rye flakes are tender and water is absorbed, about 30
minutes.
While cooking, wash and core tomatoes.
Cut
top off and scoop out center and set aside.
Chop the tomato pieces
scooped from the shell.
Add to skillet in last 5 minutes of cooking.
Remove from heat and stir in yogurt.
Season to
taste with salt and pepper.
Fill centers of tomatoes with mix and serve.
