Lecithin
Granules (Plain Soy)
| Soy lecithin is a
mixture of fatty substances that are derived from the processing of
soybeans.
Lecithin is separated from soybean oil by the
addition of water and centrifugation (rapid spinning) and purified for use
as a food additive.
Lecithin is used widely in foods as an
emulsifier, stabilizer, and antioxidant.
RECIPE:
Apple-Persimmon
Squares
2 2/3 c sweet
white rice flour
2 1/2 T ground flax seeds
1 1/2 t lecithin
granules
1/4 t sea
salt
1/2 t nutmeg
1/4 t ground ginger
1/2 c apple juice
1/4 c corn oil
1 t Spicery Shoppe
vanilla
1 T barley malt syrup
2 c dried apple dices
1 cup dried persimmons
chopped
1/2 c chopped pecans
1 t ground cinnamon
Preheat
oven to 350 degrees.
In small bowl, place dried apples and persimmons. Add 4 c boiling water
and set aside for 20 min.
In a large bowl mix together the flour, ground flax seeds, lecithin, salt,
nutmeg and ginger.
In a medium bowl mix together the apple juice, corn oil, vanilla, and
barley malt syrup.
Stir the wet ingredients into the dry. Drain and add in the apples and
persimmons and press the batter into a 10x6x2 inch oiled baking dish.
Top the batter with the pecans and sprinkle with cinnamon.
Bake for 25 minutes or until a toothpick inserted in the center emerges
clean.
