Tapioca, pearl, dry

Pearl Tapioca is processed tapioca
starch forced through a sieve to produce the desired shape. It is
nearly flavorless and gives a transparent gloss to fruits. It is
most desirable in puddings and in juicy summer fruit pie fillings.
RECIPE
Tapioca Pudding
1/4 c tapioca
1 Egg separated
3 cup milk
1/3 c cane juice crystals
1/4 t. sea salt
1 t. Spicery Shoppe vanilla
Place tapioca in pan and cover with boiling water. Let soak for 1
hour. Drain water not absorbed by tapioca.
Beat egg yolk in top of double boiler.
Stir in
tapioca, milk, sugar, and salt, and place over boiling water in bottom of
double boiler.
Cook and stir for 10 min. Remove from heat and
stir in vanilla.
Beat egg white til stiff but still shiny and fold into
pudding thoroughly.
