RECIPE:
Amaretto Apricot
Muffins
2 c unbleached
all purpose flour
1 T baking powder
½ t. baking soda
¼ t. sea salt
1 beaten egg
1 c buttermilk
2/3 c packed brown sugar
½ c butter melted
½ t. Spicery Shoppe
Vanilla flavoring
¼ t Lorann
Amaretto flavoring
½ c dried apricots,
diced
½ c golden raisins
½ c sliced almonds
Grease 12-cup muffin tin
and set aside.
In large bowl, combine
first 4 ingredients and make a well in center.
Set aside
In another bowl, combine
next 6 ingredients. Stir in
apricots and raisins. Add to
flour mix all at once and stir just to moisten.
Spoon
batter into muffin tin filling 2/3 full.
Sprinkle with almonds. Bake
at 400ºF for 18-20 minutes or til done.
Cool slightly in pan on wire rack for about 5 min. Then remove from
cups.
