RECIPE:
Blueberry Coffee
Cake
Topping:
¼ c butter, chilled and cut in pieces
1/3 c unbleached all purpose
flour
½ c packed brown sugar
1 t. cinnamon
Cake:
2 c unbleached all
purpose flour
2 ½ t baking powder
½ t sea salt
½ c butter at room temperature
1 c cane juice crystals
2 large eggs
¼ t Lorann Orange
oil
½ t Lorann
Blueberry flavoring
1 c milk
1 12 oz package frozen blueberries, unthawed
Combine topping
ingredients and mix with fork til crumbly and set aside.
Preheat oven to 350ºF.
Butter and flour 13x9x2” baking pan.
Combine flour, baking powder and salt.
Beat ½ c butter til fluffy. Gradually
add cane juice beating til well blended then add eggs one at a time,
beating well after each addition. Mix
in flavorings. Add dry
ingredients to batter, alternately with milk in 3 additions each.
Fold in blueberries.
Pour
batter into pan and sprinkle with topping mix.
Bake about 50 min or til toothpick comes clean.
Cool slightly.
