RECIPE:
Carob Mint Meringue Gems
Light and airy, these tasty delights need to be left in the oven overnight to become crisp.
TIP: Don't try to make these on a humid day.
Ingredients:
2 egg whites
1/2 teaspoon cream of tartar
1 pinch sea salt
3/4 cup fructose
1/8 teaspoon LorAnn Gourmet Peppermint Flavoring
3 -4 drops Green
Liquid Candy Coloring
1 cup unsweetened carob chips
Directions:
Preheat oven to 375 degrees F. Beat egg whites until fluffy. Add cream of tartar and salt. Add sugar, 2 tablespoons at a time, beating well after each addition. Stir in Peppermint Flavoring and Food Coloring. Fold in chocolate chips. Drop onto greased cookie sheet by half teaspoonful. Place in oven and immediately turn off heat. Leave in oven overnight.
Variation: Substitute a different LorAnn Gourmet Flavoring, such as Raspberry, Cherry or Lemon for the Peppermint; use a different Food Coloring; or use nuts in place of chocolate chips.
