LorAnn's concentrated oils and
flavorings have been an integral part of candy and confectionary making
for over 40 years for both the professional and the home chef.
Hard candy is just one project made easy with LorAnn
premium flavorings as the oils are specially formulated for optimal
results in chocolates, baking, fudges and all kinds of specialty
confections.
The one ounce bottles are enough for up to 25 pounds of
chocolate. For smaller amounts, use approximately 1/4 to 1/2
teaspoon of flavoring per pound of chocolate or compound.
This LorAnn flavor is Kosher Certified, Pareve by Star
K.
The flavorings are highly concentrated and
should be kept out of the reach of children. All flavor ingredients
are approved for use by the FDA.
RECIPE:
DECADENT
CHOCOLATE FUDGE
1
c cane juice crystals
1 c brown sugar
¼ c tapioca syrup
½ c milk
¼ c butter melted
2 T cocoa powder
1 t. Lorann Orange
Brandy Chocolate flavoring
Butter
8” square pan and set aside
Combine
sugar, syrup, milk, and melted butter in a very large, heavy saucepan. Boil
2 ½ min then add cocoa powder and stir in.
Cook
and stir constantly over medium heat washing down sides of pan frequently
with pastry brushed dipped in hot water to remove sugar crystals.
Cook until sugar dissolves and mixture comes to boil.
Add candy thermometer.
Continue
cooking over medium, stirring often til thermometer reaches 238ºF.
Remove from heat. Add flavoring. Allow
to cool 5 min. Beat
vigorously with wooden spoon until creamy.
Pour into prepared pan. Score
into squares with knife. Refrigerate
til firm. Cut into squares.
Store
in refrigerator covered with plastic wrap.
