All purpose, Gluten free flour is a versatile flour for
celiacs. A blend of five flours it can be used in most recipes to
produce breads, muffins, cakes, biscuits and other goodies.
To get you started we have added a little recipe using
Gluten-free Corn Meal Muffins
3/4 c yellow corn meal*
1 1/4 c milk
1 c all purpose gluten-free flour*
1 T aluminum free baking powder*
1/2 t. sea salt*
1/2 c cane juice crystals*
1 1/2 t. guar gum*
1 egg slightly beaten
1/4 c. cooking oil
Preheat oven to 400º F. Line muffin tins with
baking cups or spray with oil.
Warm milk to simmer and stir in corn meal. Blend
in oil and egg.
Combine dry ingredients and stir corn meal mixture into
dry ingredients with a fork. Do not over blend.
Fill cups 2/3 full and bake for 20-25 minutes.
