Garbanzo bean flour is made from
grinding Garbanzo beans ( sometimes called chickpeas or cici) to a fine
flour and works well by itself or blended with other bean flours.
If you are on the Candida diet, here's a
great alternative meal for you. Garbanzo tamales are tamales made with
garbanzo flour instead of corn.
Perfect for all kinds of baking, including breads,
pizza, cakes and cookies. Use Garbanzo bean flour in place of rice flour
in any of your favorite recipes. Remember bean flours provide protein for
superb gluten-free baking.
Gluten Free Sweet Potato Muffins
- Ingredients:
- 3/4 cup Canned Sweet Potatoes, mashed
- 1/2 cup Rice
Syrup
- 2 Tb Sorghum
- 1/3 cup Vegetable Oil
- 2 Large Eggs*
- 1 tsp Cider Vinegar
- 3/4 cup Garbanzo Bean Flour
- 1/2 cup Potato Starch
- 1/3 cup Tapioca Flour
- 1 tsp Xanthan Gum
- 1/2 tsp Sea Salt
- 1-1/2 tsp Baking Powder
- 1-1/2 tsp Baking Soda
- 2 tsp cinnamon
- 1/2 tsp Allspice (ground)
- 1/2 cup chopped Pecan Halves
Preheat oven to 350°F.
Spray standard 12-muffin pan with cooking spray or use paper liners.
Combine sweet potatoes, rice syrup, sorghum, oil, egg, and vinegar in
large mixing bowl. Beat on low until very, very smooth – about 1 minute.
Combine remaining ingredients (except nuts) and add to sweet potato
mixture. Blend at low speed until moistened. Stir in nuts. Transfer batter
to prepared pan and bake for 25-30 minutes or until firm.
Cool in pan on wire rack for 10 minutes. Remove from pan and cool on wire
rack.
Yield: 12 muffins
