This rye flour is milled from the same
grain as the dark rye flour. Only the coarsest bran is removed to
create a flour with finer texture and lighter flavor and color.
This is the primary rye flour in lighter rye breads.
It is recommended for use as the primary rye flour in your
breads.
It can also be used as a replacement for medium rye flour.
Vital Gluten is frequently added to enhance
the ability of breads to rise when using a flour that has had bran and
germ removed.
