Buckwheat is another
grain considered gluten-free and is used as a rice alternative in gluten
free diets. Unhulled buckwheat can be sprouted and used for salads.
Buckwheat whole groats are buckwheat grain with
the inedible husk removed. These triangular seeds are most often used to
make the flour.
Unprocessed white
groats are slightly bitter, so before you cook them it's a good idea to
toast them in oil for several minutes until they're rust-colored.
This removes the bitterness and brings out a pleasant, nutty flavor.
If you don't want to do this yourself, you
can buy already roasted groats, called kasha.
RECIPE
BUCKWHEAT CHEESE SQUARES;
1 c. cooked buckwheat
1 c. ricotta cheese
3 egg yolks
1/2 t salt
1 t. chopped chives
1 t. basil
1/2 t. thyme
warm tomato sauce
Combine all ingredients except
tomato sauce. Blend together thoroughly. Pour into a buttered casserole.
Bake in preheated oven at 400ºF for 30 min
until lightly browned.
Serve with warm tomato sauce (could use
spaghetti sauce).
