List of Ingredients

Buckwheat is another grain considered gluten-free and is used as a rice alternative in gluten free diets. Unhulled buckwheat can be sprouted and used for salads.
Buckwheat whole groats are buckwheat grain with the inedible husk removed. These triangular seeds are most often used to make the flour.

Unprocessed white groats are slightly bitter, so before you cook them it's a good idea to toast them in oil for several minutes until they're rust-colored.  This removes the bitterness and brings out a pleasant, nutty flavor.
If you don't want to do this yourself, you can buy already roasted groats, called kasha.

1 c. cooked buckwheat
1 c. ricotta cheese
3 egg yolks
1/2 t salt
1 t. chopped chives
1 t. basil

warm tomato sauce
