Yellow corn is a versatile grain.
Used in many Native American recipes, ground into grits, meals and flours,
it can be an important addition to any diet.
SPICY CORN NUTS:
1 c. dried corn
2 T. corn oil
Garlic salt, Taco seasoning, or other spicy seasoning mix.
Soak corn in 4 c. water
overnight. Drain rinse and dry thoroughly on paper toweling.
Heat oil in heavy skillet
until very hot but not smoking.
Add corn and shake or stir constantly til
corn is toasted, about 5 minutes. Corn will slightly brown.
Drain on paper towel and sprinkle with your
choice of seasoning.
