Quinoa (pronounced “KEEN-WA”) is
a grain similar to Millet and Amaranth. Originally from South America, it
is also gluten-free.
Nutritionally Quinoa is oil rich and twice the
protein of rice. It will expand 4 times its bulk in cooking.
1 c. quinoa
2 c. boiling water
1/2 t. cinnamon
1/2 c. raisins
Rinse quinoa. Drain. Place quinoa in a skillet over
Shake pan occasionally while roasting.
In about 15 minutes
grain should be dry and golden brown.
Combine remaining ingredients.

Cook until liquid is absorbed, about 15-20 min.
