Spelt is an ancient grain
related to oats and wheat.
Spelt does contain some gluten but many on a no
wheat diet are able to digest spelt.
It has a mild flavor.
RECIPE
SPELT SALAD:
2 c. cooked spelt, room temp.
1 c. finely shredded red cabbage
1 c. shredded carrots
1 c. bean sprouts
1/2 c. diced sweet yellow pepper
1/2 c. diced celery
1/2 c. diced onion
Dressing:
1/4 c lemon juice
1 t. Dijon mustard
1/4 t coarse black pepper
1/4 c olive oil
1 t. sesame seeds
Mix together all salad ingredients.
Mix Dressing
ingredients.
Toss lightly. Serve on lettuce.
