Teff is similar to millet and is the
smallest grain. 150 grains weigh only as much as a kernel of wheat and
have a
distinctive, nutty flavor.
Originally a cereal crop in Africa and
especially Ethiopia for thousands of years.
Gluten free, Teff is an excellent addition to a celiac diet.
RECIPE
TEFF BREAKFAST PUDDING:
3 c. cooked Teff
2 eggs
1/2 c. milk
2 T. honey
1 c. date pieces
Nutmeg
Combine all ingredients except nutmeg.
Place in
casserole.
Bake at 350º F for 30 min or til set.
Serve with cream and a
sprinkle of nutmeg.
