Cloves are
strongly aromatic and very intensive fragrance; fiery and burning taste.
They have a sharp, wintergreen-like flavor.
The clove tree is native to Indonesia and
were cultivated on several islands there. The Dutch helped spread
the use of cloves to other countries.
Cloves combine well with beets, green
beans, carrots, squash, fruit salads and compotes, rhubarb,
prunes, cranberries, meat stews, cakes, puddings, mincemeat, and
marinades.
The whole cloves are typically used in spice bags and
as part of the spices that are used for mulling cider etc.
Another common use is to
pierce a few whole cloves into the outer surface of a ham.
