tartrate.
It is naturally occurring in grape
juice but is precipitated even more when wine is made from the
juice.
It is not an herb or spice but an essential ingredient in meringue and
other recipes.
Cream of tartar is the acid ingredient used in the making of baking
powder.
Cream of tartar is slower in reacting
with soda than lemon juice for instance, hence its usefulness in
