| Honey is one of
natures tastiest sweeteners. Produced by bees, it is primarily
composed of fructose, glucose and water. It also contains other sugars as
well trace enzymes, minerals, vitamins and amino acids
Natural Comb honey is honey that comes as it was produced —
in the honey bees' wax comb. The comb itself is edible!
Liquid honey is extracted from the honey comb by centrifugal
force, gravity or straining.
Because liquid honey mixes easily into a variety of foods,
it's especially convenient for cooking & baking.
DO NOT feed your baby honey. Honey may contain
Clostridium botulinum spores that can cause infant botulism - a rare but
serious disease that affects the nervous system of young babies (under one
year of age). C. botulinum spores are present throughout the environment
and may be found in dust, soil and improperly canned foods. Adults and
children over one year of age are routinely exposed to, but not normally
affected by, C. botulinum spores.
RECIPE
Amaranth Muffins
Ingredients:
3/4 c hot water
1/4 c. oil
1/4 c. honey*
1 3/4 c amaranth flour*
1/4 c. almond meal flour*
1/4 c. arrowroot powder*
1/8 t. sea salt*
2 t baking soda*
1/2 t. citric acid*
1 t cinnamon*
1/2 c. diced almonds*
1/2 c. raisins*
1 t. vanilla flavoring*
In bowl combine water, oil & honey. Set aside til honey
melts. Combine dry ingredients and raisins and nuts. Mix
well. Add vanilla to liquids and add to dry ingredients all at once
stir only til mixed. Fill muffin papers full. Bake 375ºF
22-25 minutes. Makes 9-10 muffins.
