
Buttermilk is first
pasteurized, then concentrated with an evaporator and finally dried to
produced buttermilk powder.
Buttermilk powder is low in
fat and provides and excellent source of protein. It is also a
source a calcium, phosphorus, riboflavin and vitamin B12.
RECIPE
SOUTHERN BUTTERMILK
BISCUITS
2 C. Unbleached
all purpose flour*
3 tsp baking powder*
1/4 c buttermilk powder*
1/2 tsp sea salt*
4 T shortening
1/2 tsp baking soda*
1 c water
Preheat oven to 450°F
Sift together flour, baking
powder, buttermilk powder and salt. Cut in shortening with pastry
blender until it resembles a coarse meal. Mix together baking soda
and water. Ad slowly to the flour mix to form a soft dough.
(at this point the dough can be saved in a covered dish in the
refrigerator for several days.)
When ready to use, roll out
on a lightly floured board to 1/2-3/4" thick and cut with a biscuit
cutter (or use a drinking glass). Place on ungreased cookie sheet
and bake 10-15 min. Serve hot.
