Egg
white powder or albumen powder is dried, pasteurized egg albumen. It is shelf stable
(does not need refrigeration). It replaces raw egg whites in recipes
calling for uncooked or lightly cooked eggs such as frostings and
meringue. Egg white powder is negative for salmonella bacteria.
1 T egg white powder + 2 T water equals 1 egg white.

Preheat oven to 400º F. Blend 1/4 cup of sugar and egg
white powder in a bowl. Add water and mix at low speed 3 to 5
minutes until smooth. Scrape bowl. Beat on high speed, gradually adding
remaining sugar and vanilla. Scrape bowl. Beat until meringue is stiff but
not dry. Spread over pie; seal to edges of crust. Bake about 10 minutes
until meringue is browned.
