Unlike its English
cousin, Black Walnuts have an extremely hard shell which grows in and
around the nutmeat. The nutmeat must be picked out around the shell
so it is impossible to get complete Black walnut halves.
The flavor of Black Walnut is distinctive
and not as tame as English Walnuts, but well worth trying in recipes like
the one below.
RECIPE
BLACK WALNUT PIE:
Unbaked 9" pie shell
1/2 c cane juice crystals
1/2 c. brown sugar
1 c light corn syrup
3 T butter
3 eggs slightly beaten
1 c black walnuts, chopped
1 T cane juice crystals
1 T whole wheat pastry flour
Combine first 3 ingredients in sauce pan
and bring just to boiling. Remove from heat and add butter.
Stir til melted.
Gradually stir hot mixture into eggs, Stir
in walnuts.
Combine last 2 ingredients and sprinkle in bottom
of pie shell. Turn walnut mixture into pie shell.
Bake at 375ºF for 40-50 min or til filling is set.
