Two major varieties of walnuts are grown in
the United States—the English walnut and the black walnut. The English
walnut originated in Persia, and the black walnut is native to the United
States.
Commercially produced varieties are nearly
all hybrids of the English walnut. California produces 99 percent of the
nation’s commercial English walnuts with almost all production taking
place in the Sacramento and San Joaquin valleys.

Walnut And Chicken Salad
½
c English walnuts
½ c Onion chopped
¼ c Parsley chopped
¼ c Celery sliced
2 c Cooked chicken, cubed
1 can mandarin oranges drained
Bibb lettuce leaves
Mayonnaise
Combine
English walnuts, onion, parsley, and a small amount of water in skillet
over medium high heat. Parboil the English walnuts long enough to remove
the skins.
Drain, remove the brown skins. Stir in celery, oranges and chicken.
Serve on lettuce leaf with dollop of mayonnaise on top.
