Pretzel salt has a
larger granules than table salt. It is perfect for coating pretzels,
some breads, and other baked goods.
OLD COUNTRY SOFT PRETZEL STICKS
1 T dry yeast
1 1/4 c lukewarm water
1 T honey
4 c whole wheat flour
1 t. sea salt
1/2 c rye flour
1 egg beaten with 1/2 t water
Soften yeast in water. Add honey and let proof for 5 min.
Combine whole wheat flour and salt. Stir into yeast. Turn
dough onto lightly floured board and knead with rye flour til smooth.
Divide dough into 48 pieces and roll into rope
shape. Place in buttered baking dish. Brush with egg and water
mixture and sprinkle with salt.
Let rise 20-30 minutes. Bake at 425ºF
for 15-20 min. Cool on rack.
