Sucanat (which is a concatenation of Sugar Cane Natural) is non-refined cane sugar that has not had the molasses removed from it like refined white sugar. It is essentially pure dried sugar cane juice. The juice is extracted by mechanical
processes.
Sucanat is generally accepted as a substitute for brown sugar. Unlike regular brown sugar, sucanat is grainy instead of crystalline.

Sucanat is darker in color than other cane juice crystals and tends to
have some of the bitter "molasses" flavor.

POTATO NUT BREAD
Ingredients:
1/2 c. soft butter
1/2 c shortening
2 2/3 c sucanat®
4 egg
2 c cold, mashed sweet potatoes
3 1/2 c sifted whole wheat
all purpose flour
1 t sea salt
1 t ground cinnamon
1 1/2 t ground nutmeg
2 t baking soda
1 c chopped walnuts
2/3 c cold strong black coffee
Cream together butter shortening and sucanat®. Add eggs one at a
time. Blending well after each addition. Blend in sweet
potatoes.
Mix together dry ingredients and nuts. Stir into
creamed mixture alternately with coffee.
Pour batter into 2 greased loaf pans and 8 lined muffin
cups. Bake at 375ºF 1 hour for loaves and 25 minutes for muffins or
til they test done in center.
Cool 10 minutes; remove from pans and
cool completely. Makes 2 loves plus 8
