Xanthan Gum
Background
Xanthan Gum is made by the
fermentation of
corn sugar with a
microbe called
Xanthomonas campestris,
from which the name is
derived.
It is most commonly used
as a stabilizer, emulsifier and
thickener in dairy foods such as
yogurt and sour cream and salad dressings. It is in a group of
food additives known as starches, gums and gels.

Uses
Xanthan Gum is used in baking gluten free breads,
cakes and cookies.
Recommendations for use:
Cakes
1/2-1 tsp
Breads/Pizza
1-2 tsp
Cookies
1/2-1tsp
RECIPE
GLUTEN FREE WAFFLES:
Ingredients:
1/3 c oil*
1/4 c sugar* or xylitol*
(for sugar free)
2 Eggs
3/4 c cornstarch*
3/4 c. potato starch*
1 1/4 t baking powder*
1/4 t xanthan gum*
1/2 t. salt*
3/4 c milk
In medium bowl, combine all ingredients
except milk. While mixing, slowly add milk, being sure to remove all
lumps from batter.
Preheat waffle iron. Spray with nonstick spray. Pour about
2/3 c batter onto waffle iron. Close lid. Cook til brown and enjoy.
