Red Beets, cooked, dried, 3/8 inch cut

Beet dices can be added to
soups, casseroles and baked goods to produce some interesting foods.
To rehydrate before adding to your recipe, soak 1
cup beet dices in 1 cup boiling water for 30-40 min to produce 1 1/2 cup
beet dices.
When adding to soups or other recipes with plenty
of liquid, you can add the beet dices directly into the food.
RECIPE:
DRIED HARVARD BEETS
1 c boiling water
1 c dried beet dices
1/3 c fructose
½ t sea salt
1 T cornstarch
½ c white vinegar
2 T butter
1 t minced dried onion
Pour
boiling water over dried beets in saucepan.
Cover and cook over low heat for 30-40 minutes or til tender.
Meanwhile blend sugar, salt and cornstarch in small pan.
Add vinegar and stir until smooth and thickened, stirring
constantly. Add butter, onion
and beets. Cook over low heat
for 15-20 minutes to blend flavors, stirring frequently.
Serves 6.
