Carrots

Carrots tend to triple in volume when
re-hydrated in boiling water. They
take about 15 minutes to cook. Re-hydrating carrots in cold water are not
a good substitute for raw carrots except in things like a carrot and
raisin salad. Texture is not
quite as good but the flavor is still there.
Mixed in soups or stews dry, they
result in nearly the same as when using freshly cooked carrots.
In casseroles or by themselves, re-hydrated carrots can be an added
