Green Beans are one dehydrated
vegetable that most resembles canned version when re-hydrated.
The texture of re-hydrated beans and the flavor are so similar it
would be hard to tell the difference.
When re-hydrated, the beans will
double in volume. ¾ cup of dehydrated green beans added to 2 cups of
boiling water can produce 1½ cup – 2 cups of green beans.
Season and serve as you would canned
beans or use them in a casserole, soups, salads.
When
adding to soups and other dishes with lots of liquid, it is not necessary
