Pumpkin, dried

Dried pumpkin powder can be
used to replace some of the flour in breads and baked goods to produce
some interesting foods.
Replace up to 1/4 c of flour with dried pumpkin powder in your favorite recipe.
In your favorite pasta recipes, start with
1 T of pumpkin powder and adjust according to the intensity of flavor
you prefer.
Dried pumpkin powder can also be used as a
natural colorant to foods. This is especially helpful if you are
trying to color yogurt coating for dog biscuits.
RECIPE:
DRIED PUMPKIN COOKIES
1 c boiling water
1 c dried pumpkin powder
½ c butter
1 c cane juice crystals
1 egg
1 t Spicery Shoppe
vanilla flavoring
2 c whole wheat pastry flour
½ t sea salt
1 t baking powder
1 t baking soda
1 t ground cinnamon
2 c chopped dried
peaches or apricots
Pour
boiling water over pumpkin powder. Let
soak for 30-45 min. Meanwhile
cream butter and cane juice til fluffy.
Add egg and vanilla and blend well.
In another bowl, combine flour, salt, baking powder, baking soda,
and cinnamon. Add chopped dried fruit.
Add pumpkin mixture to creamed mixture.
Add dry mix to creamed mix 1 c at a time beating well after each
addition. Drop by spoonsful
onto greased cookie sheets and bake at 350ºF oven for 12-15 min until
lightly browned. Makes 4 doz
cookies.
