Tomatoes can be added to soups, casseroles and baked goods to produce some
interesting foods.
To rehydrate before adding to your recipe, soak 1
cup Tomato Strips in 1 cup boiling water for 30-40 min to produce 1 1/2
cup Tomato.
When adding to soups or other recipes with plenty
of liquid, you can add the Tomato directly into the food.
RECIPE:
CHICKEN WITH SUNDRIED TOMATOES
4 skinned chicken breast
halves
2 T olive oil
1 medium onion chopped
3 cloves garlic minced
1 red bell pepper cut in strips
1 c sundried tomato halves
1 ˝ c dry white wine
1/3 c sliced pitted black olives
1 sliced lemon
1 ˝ t cinnamon
1 t honey
sea salt and black
pepper to taste
parsley
In
large skillet, over medium heat, sauté chicken breasts in oil about 5
minutes, turning once. Add
onion, garlic, and red pepper. Saute
stirring often about 4 minutes til onions are limp.
Stir in tomatoes and remaining ingredients.
Cover and simmer 15 min. Remove
cover and cook 5 more minutes until chicken is tender and sauce is reduced
slightly. Sprinkle with
parsley. Serve over rice. Makes 4 servings.
